The Stube, the Gazebo, the Chef’s Private Table three different formats, three distinct areas for guests of the 5 star Luxury and Cortina d’Ampezzo, invited to learn about the new culinary identity of Cristallo.

From the coziest restaurant of the Queen of the Dolomites with only 16 seats, for a sensory experience full of nuances and details, to the flavors and scents of a gastro-bistro, until the reception of a typical local genuine: the Hotel soul of gourmet embraces all audiences.

The Director is the Executive Chef Fabrizio Albini, combining creativity and respect for the quality of the raw material, in an expressive search that never ends.

Every kitchen is made of stories: stories that are created in the moment they are told, condensing around the enveloping vapors of cooking and the vegetable fresh scents, flavors, now soft, now determined, the ever different texture. It is the philosophy of the Cristallo Hotel Spa Golf Cortina d’Ampezzo: food is a conversation that brings people together, so the 5-star hotel in Cortina has decided to change its gastronomic identity, opening up not one but three living rooms, each one with its own personality. Three rooms for a bespoke kitchen, tailoring, sewn around the local culinary tradition, but also to the desire to venture into the territories of the imagination, drifting by the inspiration of Executive Chef Fabrizio Albini.

Around the Stube, warm heart of the house, in fact, four tables for just 16 people will offer a fine dining experience exclusive and extremely elaborate, in a completely renovated space in design and concept.

The Gazebo become a gastro-bistro, more casual but classy, ​​offering menus that tell the great Italian cuisine. The Chef Table is the place of memories, a corner dedicated to the typical and classic dishes of the Ampezzo Dolomites, a treasure trove of flavors. To Complete, a rigorous study of the framework as surprising combinations of dishes and wines, cocktails or even – thanks to the art of mixology Massimo D’Addezio, who with his experience has transformed the bar into a lounge.

We aim to develop an idea and to create a true culinary movement by developing an exceptional option in the specific name of the territory, says Fabrizio Albini.

The Stube

In the beginning it was the “Maso”. And the Stube was a primary source of warmth, hospitality, food for the body and soul. The Stube at Hotel Cristallo is the kingdom of pine, fragrant wood, and design that reinterprets the farmer aesthetic and carries it to a present contemporary taste, including curtains woven by hand and diffuse light. 4 tables, 16 seats, 4 tasting menus that are Hymns to Nature made by the chef demiurge Fabrizio Albini.

The creations of executive chef Albini express a total respect of the raw materials, the quality and freshness. The Cristallo garden is an essential element: the vegetables freshly harvested join the products of the best local pastures and food originating also from further afield, from the most interesting areas, such as for the fish of the sea. Space then to a glocal kitchen: each element comes together to create a complex palette, the result of an expressive search that never ends. As the raftsman works the wood with his skilful hands, the Executive Chef Albini transforms raw materials to shape sensory stories that excite the palate. The starting point is the product: are its characteristics to uggest techniques, colors, flavor combinations. All it combined, of course, with excellent wine elections, strictly from regional vineyards.

The cult of the art of the table is also expressed through the attention to design details: starting from Caraiba dishes with their refined lines of porcelain and Bone China, which contribute to enhance the material kitchen and unstructured Albini chef, to Mepra cutlery brand that shares a philosophy and a production history that puts quality first.

The Gazebo

Informality and class, enclosed in a light, cozy, gazebo-veranda. The flavors are inspired by the great Italian cuisine, to meet the curiosity of foreign guests, but not only. Sometimes, to tell great stories, just  simple word, food and recipes accessible, recognizable and loved all over the world. The Gastro-bistro has built into its DNA all that the Cristallo chef has learned, shared, built together with colleagues met in Italy: a layering of valuable experience, proposed in concentrated and suggestive shape.

Gazebo is a natural continuation of La Veranda: location the breakfast area where you have a privileged view over the Ampezzo valley.

The Chef’s Private Table

A reserved area, an environment that recalls the simplicity, in line with the authentic and warm atmosphere of the Dolomite mountains. The soul of the chef emerges sensory evocation of a rural world that even today lives in traditional recipes flavors and scents, the great classics that one cannot miss.

Fondue, selection of bacon, venison with polenta, rolls: are the colors of the Ampezzo table, which invites sharing and conviviality.
