Piccini is a Big Chef from Italy, actually Tuscany but really Maremman and she was Born in 1958, she was born in a very Food lovers family, where her grand mother and her mother were cooking for pleasure.That’s why she became chef for natural passion. After Scientific study and a chemical degree in 1978 she start to work in the Caino kitchen as a right arm of Angela. The restaurant was located and still is, in a medieval town called Montemerano, where 438 people lives and is considere one of the most beautiful town in Italy. Angela was at the beginning her teacher, but soon in 1986 she took the control of the kitchen and Angela definitely retired.
The seasonality of the product, with relative colors, scent, and taste are my favorite inspirational for the creation of her dishes. A very immediate kitchen with clear taste that taste tradition and Maremma. That’s why she call her kitchen the Paradise.
Behind every recipe there is a long study, research, and a luggage of flavors that they made the table of Caino an unforgettable experience.
At the beginning of the 90’s the first satisfaction start to arrive, Caino was reviewed from the most important food critic in Italy and in 1991 with arriving of the 1st Michelin Star arrived also the opening of the adjacent Shop Enoteca Perbacco where we start to sell the delicious cookies and sauces home made. 1993 was the year when we enter on the Jeaunes Restaurateurs d’Europe Chain.
Big Step for a lots of good italian restaurants.
The progress became solid when in 1998 we get the 2nd Michelin stars, that today is still up. 20 years in a row with 2 michelin stars.
In 2005 we finally entered in the Relais & Chateaux Chain and i was elected Grand Chef, in all those years all the most important Italian food critic reviewed my kitchen and our restaurant and we always being in the first places of the ranking.
She start a lot of consultant to restaurants and hotels, and just this year i got the first Michelin star in one of my consulting at the Saint Regis in Florence where i’m running as a Executive Consultant the Winter Garden By Caino.

CARATTERISTICHE
Vista: colore rosso rubino cupo con unghia violacea, imperscrutabile
Olfatto: intenso e tipicamente varietale, prevale la nota di marasca e
viola del sangiovese potenziata dall’apporto speziato e dal frutto nero
della malvasia, enologicamente netto e pulito
Gusto: caldo e potente all’attacco, morbido e con tannini molto fini,
toni boisè appena accennati che non coprono mai il frutto che è
sempre protagonista con la sua freschezza mai troppo maturo e anzi
supportato da una discreta vena acida, si allunga nel palato con note
speziate e balsamiche molto discrete e morbide
