It is with great emotion and pride that Chef Glenn Viel was awarded the third Michelin star on Monday, January 27, 2020, under the moving eye of Jean-André Charial, the owner of Baumanière.

The fruit of five years of work, research and creation, years during which Jean-André Charial entrusted the keys to the kitchen of this gastronomic institution to the talented chef Glenn Viel and his team.

Glenn Viel – Head Chef

At the helm of the kitchens of l’Oustau de Baumanière for the past 4 years, Glenn Viel is now the standard-bearer of the two Michelin stars of this temple of gastronomy. He and his team strive to dazzle each client. He places great importance on highlighting the authentic taste of prime local ingredients.
Brimming over with ideas and imagination, he has had tomato driers installed on the
restaurant’s terraces and with our baker has created food-bread pairings, serving different breads to complement each dish. He has even perfected a unique seasoning method by concentrating various ingredients (celery, mushrooms, langoustines….) into “seasoning pebbles”. Born in Brittany, he also churns his own butter from milk produced at a nearby dairy farm and is busy enlarging the vegetable garden.
Exploring the riches of the land also means collaborating with local artisans. Our table settings therefore reflect the close relationship of our Chef with fine craftspeople: pottery dishes created by ceramic artist Cécile Cayrol, blown glass creations by Alban Gaillard, wicker baskets woven by Daniel Benibghi, etc…
This year, Glenn and his team also received the “Sustainable Gastronomy” distinction awarded by the Michelin Guide.

Brandon Dehan – Head Pastry Chef

Our young pastry chef Brandon Dehan works hand-in-hand with Glenn Viel and all his creativity and expertise are showcased in the pastries he creates for our gastronomic restaurant.
He joined our kitchen team at l’Oustau de Baumanière in 2016. All of 25 years old, this native of Picardy already has an impressive track record. He learned his skills at the Auberge du Jeu de Paume in Chantilly, at the Relais Bernard Loiseau in Saulieu and at the Auberge des Glazicks in Plomodiern.
Chosen as Young Pastry Chef of 2019 by the Gault & Millau guide and singled out by the Michelin guide as one of the 30 best pastry chefs of Michelin-starred kitchens, he finds the inspiration for his creations in the vegetal and vegetable world.

Laurent Soustelle – Restaurant Manager

After beginning his career with Paul Bocuse, Laurent Soustelle became maître d’hôtel at l’Oustau in 2006.
Three years ago, he moved up to the position of restaurant manager.”I still feel the same enthusiasm today as when I started.
Baumanière gives you the sense of contributing in some way, however small, to the family history. It is a privilege to work in such a magical place and make a personal contribution. Every day I relish the smile of a client leaving the restaurant, knowing that he has had a wonderful time: our clients’ well-being, satisfaction, happiness and

Alain Gousse – Head Sommelier

After having studied at the Hotel Management school of Dijon, Alain Gousse began his career at the Tour d’Argent Restaurant in Paris.
Three years in Chablis followed, as head sommelier at the Hostellerie des Clos, next came the Hôtel de Crillon and then the Rotonde in Lyon, where he was head sommelier for 13 years. He has participated in multiple sommellerie competitions and won numerous titles. At the age of 50, Alain Gousse is succeeding Gilles Ozzello, his predecessor at l’Oustau de Baumanière, who occupied the position of head sommelier for 40 years.

1943: Raymond Thuilier purchased a Provencal farmhouse (Le Mas de Baumanière) in an unspoiled location at the foot of the fortified hilltop village of Les Baux de Provence. Just like Dante, Raymond Thuilier found the inspiration to make his dream come true in “Le Val d’Enfer” (Hell’s Valley).
Unlikely as it was, he decided to create a gastronomic inn in this remote corner of Les Alpilles, so isolated and difficult to reach that Baumanière had its own gas pump for years, to help guests on their way.
Raymond Thuilier’s arrival in Les Baux-de-Provence came at the time when France was just waking up and beginning to enjoy life again after the trauma of World War II.
Jean-André Charial is born, the elder of the 3 grandsons of Raymond Thuilier.

1945: Jean-André Charial is born, the eldest of the 3 grandsons of Raymond Thuilier.
The same year, the first bedrooms are finished and in 1946, L’Oustau de Baumanière is inaugurated by Georges Pompidou, Deputy Commissioner for Tourism at the time. It becomes a luxury property with a swimming pool and a riding center. Later, in 1973, L’Oustau became a member of Relais & Chateaux.

1954: Raymond Thuilier’s cuisine brought him true glory and he was awarded 3 Michelin stars. L’Oustau became the favourite stopping place for people from all walks of life.
Famous writers, gifted painters, crowned heads, celebrities of every kind, gourmets and simple tourists: all beat a path to L’Oustau de Baumanière.

1959: Jean Cocteau moved into Baumaniere for 3 months while he was making the film “The testament of Orpheus” in the old stone quarries. Picasso came to visit him. This was the start of the career of the photographer Lucien Clergue 1961 : Raymond Thuilier took the first step in its expanding the domain by opening a second, “simpler” restaurant just 900 meters from L’Oustau de Baumanière. La Cabro d’Or has grown into a 25-room Relais & Châteaux hotel and a gastronomic restaurant.

1969: Jean-André Charial, after completing his studies at HEC, France’s top business school, trained in the hotel industry and set off on a France-wide tour through the kitchens of its great chefs: Chapel, the Troisgros brothers, Haeberlin, Bocuse and Girardet…
A first Michelin star is awarded to La Cabro d’Or.
After his ‘tour de France’ Jean-André Charial returned to Provence and for 24 years he and his grandfather Raymond Thuilier worked hand-in-hand. The two men managed to turn their generation gap into an asset, helping them make their mutual quest for perfection and love of the land known throughout the world.

1972: During her official trip to France, Queen Elizabeth of England stayed for 2 nights at L’Oustau de Baumanière.

1974/1975: Official visits by foreign leaders included Teng Hsiao-Ping, the Shah d’Iran and Saddam Hussein.

1984 : L’Oustau de Baumaniere entered gastronomic history, when it celebrated the 30th anniversary of its 3 Michelin stars.

1987: Jean-André Charial created the wine domain of Chateau Romanin and became a winemaker.

1993: Since the death of his grandfather, the destiny of Baumanière has rested in the hands of Jean-André Charial and his wife Geneviève. They constantly strive to improve the savoir-faire and standards of excellence within their properties.

1995: Celebration of the 50th anniversary of Baumanière. L’Oustau has never stopped evolving.

2000: The Manoir became the 5th historic building of the Baumanière domain, housing 8 suites and 5 rooms.

2001 : Jean-André Charial left Chateau Romanin and began making his own wine, l’Affectif, at Domaine de Lauzières.

2002 : On the 31st December, a fire broke out in the wine cellar and spread to the kitchen. 5000 prestigious wines were lost in the fire.

2007: Just a stone’s throw from Avignon, Le Prieuré, recently acquired by Geneviève and Jean-André Charial, reopened its doors in 2007, after 6 months of extensive renovations. With its priest’s garden bordered by wisteria-draped trellises, this Relais & Chateaux hotel, built in the 14th century, has a rare charm.
A few months later, the Spa Baumanière was also created.

2009 : In December of that year, when the Boix-Vives family opened Le Strato Hotel in Courchevel 1850, Jean-André Charial was delighted to accept the offer of taking over the restaurant Baumanière 1850.

2015: Jean-André and Geneviève Charial celebrated the seventieth anniversary of Baumanière. La Cabro d’Or and L’Oustau de Baumanière merged into one hotel complex : Baumanière Les Baux de Provence.
A new Head Chef, Glenn Viel, arrives in L’Oustau de Baumaniere.

2019: Baumanière is a member of the French Excellence.
Publication of the book «L’Esprit de Baumanière» by Jean-André Charial at Flammarion editions.

2020: this year Baumanière celebrates its 75th anniversary.
Jean-André Charial is appointed Knight of the Legion of Honour by the Ministry of Agriculture and Food.
The Oustau finds its 3rd Michelin star 30 years after losing it, placing it again in the firmament of gastronomy.

C’est avec beaucoup d’émotion et de fierté que le Chef Glenn Viel a été récompensé par la 3ème étoile Michelin ce lundi 27 Janvier 2020, sous l’œil ému de Jean- André Charial, le propriétaire de Baumanière.
Cette étoile tant attendue avait été attribuée en 1954 et perdue en 1990… 30 ans plus tard, c’est une nouvelle consécration !

Le fruit de cinq années de travail, de recherche et de créations, années pendant lesquelles Jean-André Charial, a confié les clefs de la cuisine de cette institution gastronomique au talentueux chef Glenn Viel et à son équipe.

Raymond Thuilier – Fondateur de Baumanière

UNE PAGE D’HISTOIRE

1943: Raymond Thuilier se porte acquéreur d’un mas provençal, enraciné dans la terre sauvage, au pied de l’orgueilleuse Cité des Baux où seul souffle le mistral. C’est dans le Val d’Enfer qui inspira Dante, qu’il trouve l’inspiration pour réaliser son rêve.
Le lieu est isolé, désertique, l’accès par la route des Alpilles peu praticable. Cependant Raymond Thuilier est fermement décidé à en faire un lieu unique. Son arrivée aux Baux-de-Provence coïncide avec une période d’éveil de la France.

Cette même année nait Jean-André Charial, l’aîné des 3 petits fils de Raymond Thuilier.

1945: Les premières chambres ouvertes, l’Oustau de Baumanière est inauguré par Georges Pompidou (en 1946) et deviendra un hôtel de luxe avec piscine, cercle hippique, puis à partir de 1973 fera partie de l’association des Relais et Châteaux.

1954 : La cuisine de Raymond Thuilier, lui vaut de collectionner trois étoiles au guide Michelin. L’Oustau devient l’étape privilégiée où se croisent des personnalités issues des milieux les plus divers. Hommes de lettres ou peintres de génie, Princes de ce monde ou têtes couronnées, gastronomes ou touristes, tous font route vers l’Oustau de Baumanière.

1959: Cette année-là, Jean Cocteau tourne le Testament d’Orphée au Val d’Enfer et dans les carrières des Baux-de-Provence.

1961: Raymond Thuilier ouvre un second restaurant « plus simple » à 900 mètres de l’Oustau de Baumanière, La Cabro d’Or qui fait aujourd’hui partie de Baumanière les Baux de Provence.

1969: Jean-André Charial, âgé de 24 ans, décide, après ses études HEC, de rejoindre son grand-père en Provence. Puis, il forge son expérience dans la diversité des écoles et entame un tour de France des grands chefs: Chapel, les frères Troisgros, Haeberlin, Bocuse, Girardet…
Une première étoile au guide Michelin est attribuée à la Cabro d’Or.
Vingt-quatre ans durant, Raymond Thuilier et Jean-André Charial vont travailler main dans la main et faire évoluer la carte de l’Oustau de Baumanière.

1972: La Reine Elizabeth d’Angleterre séjourne en Provence à l’Oustau de Baumanière lors de son voyage officiel.

1974 /1975: les visites officielles se succèdent avec la venue de Teng Hsiao-Ping en 1974 puis le Shah d’Iran et Saddam Hussein en 1975.

1984: L’Oustau de Baumanière entre dans l’histoire de la gastronomie. 30 ans au firmament, 30 ans de 3 Etoiles pour l’institution du Val d’Enfer. Une première.

« Baumanière n’est pas une hôtellerie, c’est une récompense. Un lieu d’exception qu’il faut mériter. Je plains de toute mon âme ceux qui s’y rendent en « clients », uniquement parce que la table y est somptueuse, le cadre magnifique et le service d’une rare perfection ; j’éprouve une grande mélancolie en songeant que des gens […] viennent y chercher les traces de la Reine d’Angleterre, du Général de Gaulle et de cent autres illustrissimes qui glissèrent leurs augustes pieds sous la meilleure table de France.
Car pour moi, l’Oustau est une philosophie: celle du raffinement poussé jusqu’au sublime; pour moi, l’Oustau est un endroit secret, en marge de la vie, résultant de la rencontre d’un site et d’un homme aussi exceptionnels l’un que l’autre. »

1987: Jean-André Charial crée le Château Romanin. Il devient vigneron.

1993: Depuis la mort de son grand-père, Jean-André Charial préside avec son épouse Geneviève aux destinées de Baumanière. Ils n’ont decesse de développer le savoir faire et la tradition d’excellence de l’Oustau de Baumanière.

1995: 50 ans de Baumanière. L’Oustau ne cesse d’évoluer.

De 1993 à 2000, Baumanière évolue sans cesse avec des travaux d’amélioration, des créations de nouvelles chambres…

2000: Le Manoir est rattaché au domaine de Baumanière qui dispose maintenant de 8 suites et 5 chambres.

2001: Jean-André Charial quitte le Château Romanin et vinifie un nouveau vin au domaine de Lauzières: l’Affectif.

2002: Le 31 Décembre 2001, un incendie se déclare à la cave et gagne les cuisines. La brigade des cuisiniers se démène au milieu de celle des pompiers et le repas du réveillon arrive sur la table comme si de rien n’était. Les cuisines de Baumanière font peau neuve cette année-là et 3 nouvelles chambres sont créées au dessus des cuisines.

2007: C’est à Villeneuve-lès-Avignon que Jean-André et Geneviève Charial s’attellent à la rénovation d’un ancien cloître monastère. Le Prieuré, établissement hôtelier depuis 1943, ouvre ses portes à nouveau au printemps de la même année. L’été 2007, le Spa Baumanière voit le jour, comme un trait d’union entre l’Oustau de Baumanière et la Cabro d’Or.
« Aujourd’hui, nous avons envie de faire voyager le rêve et l’expérience Baumanière au-delà de ce pays natal. Et pour que ce développement soit fidèle à notre sensibilité et aux émotions que nous voulons partager, nous avons construit une marque « Baumanière », posée comme un sceau, dans la continuité de ce qui guide notre geste aux Baux de Provence depuis plus de 70 ans. »

2015: L’Oustau de Baumanière fête ses 70 ans. La Cabro d’Or et l’Oustau de Baumanière se réunissent pour créer une seule entité: Baumanière Les Baux de Provence.

2020: cette année Baumanière fête ses 75 ans. Jean-André Charial est nommé chevalier de la Légion d’Honneur par le ministère de l’Agriculture et de l’Alimentation.
L’Oustau retrouve sa 3ème étoile Michelin 30 ans après l’avoir perdu, le plaçant de nouveau au firmament de la gastronomie.

Cet établissement de renommée internationale marque des générations de gourmets et séduit depuis toujours les têtes couronnées et les célébrités en quête d’un restaurant gastronomique d’exception en Provence.
« J’ai quatre restaurants, et il me fallait quelqu’un à mes côtés. Mon choix s’est porté sur Glenn Viel, car j’aime son état d’esprit et sa façon de cuisiner. Je reste là mais il est toujours présent, il m’apporte un peu de jeunesse, tout en conservant l’esprit tradition de la cuisine de Baumanière ». Glenn Viel est originaire de Bretagne, ce jeune chef a fait ses armes dans les plus belles maisons françaises du
Meurice au Kilimandjaro où il a obtenu deux étoiles au guide Michelin. Il est à présent fier de travailler à L’Oustau de Baumaniere et il bouscule l’histoire tout en respectant la tradition. »

Glenn Viel – Un chef cuisinier-artisan, à la recherche d’émotions

Aux commandes des cuisines de l’Oustau de Baumanière depuis 2015, Glenn Viel porte désormais les 3 étoiles de ce monument gastronomique et œuvre avec sa brigade pour faire rêver chaque hôte venu à sa table. Il aime mettre en exergue le produit dans sa version la plus authentique et déborde d’idées et d’imagination offrant ainsi une expérience unique.
Après avoir fait installer des séchoirs à tomates sur les terrasses du restaurant, il crée avec le boulanger un accord mets-pains en proposant des pains différents avec chaque plat ; il a mis au point un système inédit d’assaisonnement par la concentration d’ingrédients (céleri, champignons, langoustines,…) ses « cailloux d’assaisonnement ».
Breton d’origine, il fabrique également son beurre à partir du lait produit à la ferme la plus proche et agrandit le potager.
Découvrir la richesse du terroir passe aussi par une collaboration avec les artisans locaux. Ainsi, les arts de la table de l’Oustau de Baumanière sont également le fruit d’une grande réflexion entre le chef et les artisans : la vaisselle créée par la céramiste Cécile Cayrol, les créations en verre soufflé d’Alban Gaillard, les paniers en osier de Daniel Benibghi, etc….
Cette année, Glenn et ses équipes ont reçu la distinction « Gastronomie Durable » décernée par le Guide Michelin.

Brandon Dehan- Chef Pâtissier

Le jeune pâtissier Brandon Dehan travaille main dans la main avec Glenn Viel et met à l’honneur toute sa créativité et son savoir-faire dans les pâtisseries du restaurant gastronomique.
Il a rejoint les cuisines de l’Oustau de Baumanière en 2016. Du haut de ses 26 ans, le jeune Picard a déjà un beau parcours derrière lui. Il a fait ses armes à l’auberge du Jeu de Paume à Chantilly, au Relais Bernard Loiseau à Saulieu
et à l’Auberge des Glazicks à Plomodiern.
Elu Jeune Pâtissier 2019 par le Gault & Millau et récompensé par Michelin avec le trophée « Passion Dessert » mettant à l’honneur les 30 meilleurs pâtissiers
de la cuisine étoilée, il trouve son inspiration dans le végétal et les légumes pour réaliser ses créations.

Laurent Soustelle – Directeur de salle

Après avoir fait ses armes chez Paul Bocuse, Laurent Soustelle a débuté comme maître d’hôtel à l’Oustau en 2006.
Depuis plus de treize ans, il est directeur de salle. « J’éprouve aujourd’hui le même enthousiasme qu’à mes débuts. Baumaniere c’est un sentiment, aussi petit soit-il, de contribuer à l’histoire familiale. C’est un privilège d’évoluer
dans ce lieu magique, d’apporter une pierre à l’édifice. Je me nourris au quotidien du sourire d’un client quittant le restaurant sachant qu’il a passé un bon moment : le bien-être, la satisfaction, le bonheur et le plaisir du client
est notre priorité. »

Alain Gousse – Chef sommelier

Après avoir fait l’école hôtelière de Dijon, Alain Gousse a débuté sa carrière à Paris au restaurant de La Tour d’Argent. Après 3 années passées à Chablis comme chef sommelier à l’Hostellerie des Clos, Il passe par l’hôtel de Crillon
puis la Rotonde à Lyon où il est chef sommelier pendant 13 ans, il multiplie les concours de sommellerie et décroche de nombreuses distinctions.
A 50 ans, Alain Gousse a succèdé à Gilles Ozzello, chef sommelier de l’Oustau de Baumanière, poste occupé par son prédécesseur pendant 40 ans.
