Taiwan, August 24 – Michelin today announced its full restaurants selection for the 2020 edition of the MICHELIN Guide Taipei & Taichung. A total of 170 eateries in Taipei and 56 in Taichung were highlighted in the latest annual selection.
“After the very first edition of the MICHELIN Guide Taipei in 2018, our inspectors decided this year to also share their favourite restaurants in the city of Taichung, a city where, thanks to the talents of its chefs, the combination of gourmet traditions and innovations, and a high level of excellence, the gastronomic scene is buzzing,” said Gwendal Poullennec, International Director of the MICHELIN Guides. “With the vibrant selection of Taipei restaurants, which is improving year after year, this enriched edition aims to show the world the richness and diversity of Taiwanese culinary scene” continued Gwendal Poullennec.
One New 2-Star Restaurant and 3 New 1-Star Restaurants in Taipei Four restaurants in Taipei have received new star recognitions this year. logy, which received one MICHELIN Star for the first time last year, was promoted to two stars in the 2020 selection.

Opened in 2018 as a spin-off from the celebrated Florilège in Tokyo, the 13-seater helmed by Japanese chef Ryogo Tahara elevates local ingredients with modern techniques and strong Asian influences.
The promotion of logy brings the total number of two-MICHELIN-star restaurants in Taipei to 6, including RAW, Shoun Ryugin, Sushi Amamoto, Taïrroir and The Guest House, which have all maintained two stars.
A Cut steakhouse, located on the ground floor of the Ambassador Hotel Taipei, has been promoted to one star this year from its previous MICHELIN Plate recommendation. Diners can watch as premium cuts of beef from the US and Australia are prepared in an open kitchen alongside a hip,
glitzy bar encased by walls of wine cabinets.
Two other restaurants in Taipei have been newly awarded one star. Molino de Urdániz, located in the MVSA Hotel, is the first overseas branch of the two-MICHELIN-star restaurant El Molino de Urdániz in Spain. The two head chefs were trained in the Spanish flagship and offer a 12-course tasting menu that takes diners on a culinary journey traversing the mountains and the seas of Taiwan. The other new one-star restaurant is Sushi Akira in Zhongshan District, helmed by a chef with over 20 years of experience. The venue underwent a makeover in 2018, but what stayed consistent is the chef’s exacting standards in serving Edomae sushi using only the finest fish. With these new additions, Taipei has a total of 19 one-MICHELIN-starred restaurants.

Cantonese restaurant Le Palais maintains its three-star rating and is currently the only three-MICHELIN-star restaurant in Taiwan. In total, the 2020 edition of the MICHELIN Guide Taipei & Taichung lists 26 MICHELIN Star restaurants in Taipei.
In addition to the four newly-starred restaurants, there are 18 restaurants in Taipei that have newly entered the selection with a MICHELIN Plate rating. They span a diverse range of cuisines, from contemporary European (Anima, The Tavernist, Ulv and Yoru), Thai (Baan), Southeast Asian (Chope Chope Eatery), French contemporary (Mirawan and Paris 1930 de Hideki Takayama), Italian (Pasti Trattoria), Shanghainese (Shen Pu Shang Yen), Japanese (Sushiyoshi) and innovative (Chateau Zoe); as well as different styles including teppanyaki (Iron Chef Teppanyaki, The Ukai and Zan), barbecue (Vanne Yakiniku) and sushi (Sushi Masuda and Sushi Wou) — underscoring the importance of Taipei as an exciting and dynamic gastronomic centre that gathers culinary talents from around the world.
A total of 11 street food venues in Taipei’s iconic night markets such as Raohe, Ningxia, Linjiang Street and Jingmei were also highlighted in this year’s selections with a MICHELIN Plate.
Released two weeks ago, the MICHELIN Guide Taipei & Taichung 2020 also highlights 54 Bib Gourmand restaurants in Taipei where diners can enjoy a high-quality three-course meal for less than 1,000 Taiwan dollars (excluding drinks).

One 2-Star Restaurant and Three 1-Star Restaurants in the Brand New Taichung Selection Expanding their selection to Taichung for the first time, MICHELIN Guide inspectors have recognised four restaurants in the city with MICHELIN Stars. “Our inspectors have been really impressed by the high level as well as the gourmet effervescence of Taichung culinary scene.
They discovered no less than 56 restaurants worth a MICHELIN distinction, including one 2-stars and three 1-star restaurants, which all together illustrate the gastronomic attractiveness of the city”, commented Gwendal Poullennec.
Directly debuting in the MICHELIN Guide with two stars is JL Studio led by Singaporean chef Jimmy Lim, who earned his culinary chops in renowned global restaurants. For his tasting menu, he deconstructs iconic Singaporean dishes such as Hainan chicken rice or satay and chilli crab and playfully recreates them using solid French techniques.
Three restaurants received one star: Fleur de Sel’s female head chef Justine Li worked in France and Italy for three decades before launching her own venue in Taichung, where the whimsical yet precisely executed tasting menus feature local ingredients and change daily.
At Forchetta, veterinarian-trained head chef Max Tseng expresses his passion for food and gardening through his clever East-meets-West creations created almost entirely from local produce.
Wagyu barbecue specialist, Oretachi No Nikuya, which means “our meat house” in Japanese, offers prized Hida beef cuts and rare breeds such as Kobe beef from Hyogo and Olive beef from Kagawa, as well as with a secret menu for those-in-the-know.
Oretachi No Nikuya’s chef-owner Sam Chung also receives the MICHELIN Young Chef Award this year. The award is given out to a chef who is under 36 years old and working in one of the MICHELIN Star restaurants in the year’s selection. MICHELIN Guide inspectors praised the 30 year old chef for his passion for ingredients, skillful techniques, and personal interaction with diners, making the dining experience all the more convivial and enjoyable.
In addition to the MICHELIN Star restaurants, the Taichung selection includes 31 restaurants that have been recognised with the MICHELIN Plate distinction, offering cuisines such as Taiwanese, Cantonese, Thai or French food and categories including barbecue, seafood, pasta, and sushi.
Another 21 restaurants have also been awarded a Bib Gourmand in Taichung.

Michelin a dévoilé aujourd’hui la sélection du Guide MICHELIN Taipei & Taichung 2020. 170 restaurants à Taipei et 56 à Taichung font partie de cette nouvelle édition.
” Après la toute première édition du Guide MICHELIN Taipei en 2018, nos inspecteurs ont également arpenté cette année les rues de Taichung afin de partager leurs coups de cœur. Grâce au talent de ses chefs, à un savant mélange entre traditions et innovations gastronomiques et un haut niveau d’excellence, la scène gastronomique de Taichung est en pleine effervescence” a déclaré Gwendal Poullennec, Directeur international des Guides MICHELIN. ” En plus de la sélection de restaurants à Taipei qui n’en finit pas de progresser, cette édition enrichie permet de montrer la richesse et la diversité de la scène culinaire taïwanaise ” a poursuivi Gwendal Poullennec.

Un nouveau restaurant 2 Etoiles et 3 nouveaux restaurants 1 Etoile à Taipei Quatre restaurants à Taipei figurent parmi les nouveaux étoilés de ce millésime. Iogy, qui a reçu une Etoile Michelin pour la première fois l’année dernière, obtient une deuxième Etoile dans la sélection 2020. Inauguré en 2018 comme étant une déclinaison du célèbre Florilège de Tokyo, ce restaurant de 13 places, dirigé par le chef japonais Ryogo Tahara, met en valeur des ingrédients locaux grâce à des techniques modernes et de fortes influences asiatiques.
La promotion de Iogy porte à 6 le nombre total de restaurants 2 Etoiles à Taipei, RAW, Shoun Ryugin, Sushi Amamoto, Taïrroir et The Guest House, conservant tous leurs 2 Etoiles.

Après sa rénovation et sa relance l’année dernière, le restaurant de grillades A Cut, situé au rez-de-chaussée de l’hôtel Ambassador de Taipei, obtient 1 Etoile après avoir été recommandé dans la catégorie Assiette Michelin. Les clients peuvent profiter de pièces de bœuf de première qualité en
provenance des États-Unis et d’Australie, préparées dans une cuisine ouverte, à côté d’un bar tendance entouré de caves à vin.
Deux autres restaurants de Taipei reçoivent également une première Etoile. Le Molino de Urdániz, situé dans l’hôtel MVSA, est la première antenne à l’étranger du restaurant espagnol doublement étoilé El Molino de Urdániz. Les deux chefs cuisiniers ont été formés dans la maison-mère et proposent un menu dégustation de 12 plats qui invite les clients à vivre un voyage culinaire à travers les montagnes et la mer de Taiwan. L’autre nouveau restaurant une Etoile est Sushi Akira, situé dans le district de Zhongshan et dirigé par un chef ayant plus de 20 ans d’expérience. Le lieu a été rénové en 2018, mais les standards du chef sont restés identiques, à savoir servir des sushis à la mode d’Edo (Edomae sushi) cuisinés à partir des meilleurs poissons. Avec ces nouvelles adresses, Taipei compte désormais 19 restaurants 1 Etoile.
Le restaurant cantonnais Le Palais conserve quant à lui ses 3 Etoiles et demeure le seul restaurant de cette catégorie à Taïwan. Au total, l’édition 2020 du guide MICHELIN Taiwan & Taichung recense 26 restaurants étoilés MICHELIN à Taipei.
En plus des quatre restaurants nouvellement étoilés, 18 restaurants de Taipei entrent dans la sélection avec une distinction Assiette Michelin. Ils couvrent un large éventail de cuisines, allant de la cuisine contemporaine européenne (Anima, The Tavernist, Ulv et Yoru), à la cuisine thaïlandaise (Baan), sud-est asiatique (Chope Chope Eatery), française contemporaine (Mirawan et Paris 1930 de Hideki Takayama), italienne (Pasti Trattoria), shanghaïenne (Shen Pu Shang Yen), japonaise (Sushiyoshi) ou encore créative (Chateau Zoe) ainsi que différents styles dont le teppanyaki (Iron Chef Teppanyaki, The Ukai et Zan), le barbecue (Vanne Yakiniku) et le sushi (Sushi Masuda et Sushi Wou).
Au total, 11 stands de cuisine de rue, situés dans les night markets emblématiques de Taipei tels que Raohe, Ningxia, Linjiang Street et Jingmei,le sont également recommandés avec une Assiette Michelin.

Le guide MICHELIN Taipei & Taichung 2020 met également en avant 54 restaurants Bib Gourmand à Taipei où les clients peuvent déguster un repas de grande qualité, composé de trois plats (hors boissons) pour moins de 1 000 dollars taïwanais (28 euros environ).

Un restaurant 2 Etoiles et trois restaurants 1 Etoile dans la toute nouvelle sélection de Taichung En élargissant leur sélection à Taichung pour la première fois, les inspecteurs du Guide MICHELIN ont fait de belles découvertes puisque 4 restaurants reçoivent une ou plusieurs Etoiles Michelin. ” Nos inspecteurs ont été vraiment impressionnés par le haut niveau ainsi que le bouillonnement gastronomique de la scène culinaire de Taichung. Ils ont découvert pas moins de 56 restaurants qui rejoignent directement la sélection, dont un 2 Etoiles et trois 1 Etoile, illustrant l’attractivité culinaire de la ville “, a commenté Gwendal Poullennec.
Le JL Studio, dirigé par le chef singapourien Jimmy Lim qui a fait ses premiers pas dans des restaurants de renommée mondiale, entre dans le Guide MICHELIN avec 2 Etoiles. Avec son menu de dégustation, il déconstruit des plats singapouriens emblématiques comme le riz au poulet Hainan ou le crabe satay et piment et les recrée de façon ludique en utilisant des techniques culinaires françaises.
Trois restaurants se voient attribuer une Etoile : Justine Li, chef cuisinière de Fleur de Sel, a travaillé en France et en Italie pendant trois décennies avant de lancer son propre restaurant à Taichung, où les menus dégustation, à la fois fantaisistes et précis, mettent en valeur des ingrédients locaux et changent quotidiennement.
À Forchetta, le chef cuisinier Max Zeng, formé en médecine vétérinaire, exprime sa passion pour l’alimentation et le jardinage à travers ses subtiles créations Est-Ouest élaborées presque entièrement à partir de produits locaux. Le spécialiste du barbecue Wagyu, Oretachi No Nikuya, (qui signifie “notre maison de la viande” en japonais), propose des pièces de bœuf de Hida très prisées, des variétés rares comme le bœuf de Kobe ou encore le bœuf d’Olive de Kagawa ainsi qu’un menu secret pour les initiés.
Le chef propriétaire d’Oretachi No Nikuya, Sam Chung, reçoit cette année le prix MICHELIN du jeune chef. Ce prix est décerné à un chef de moins de 36 ans travaillant dans l’un des restaurants étoilés Michelin de la sélection de l’année. Les inspecteurs du Guide MICHELIN ont félicité le chef de 30 ans pour sa passion des ingrédients, son habileté technique et sa capacité à échanger avec les convives qui rend l’expérience culinaire d’autant plus conviviale et agréable.
La sélection Taichung comprend aussi 31 restaurants distingués d’une Assiette Michelin, proposant de la cuisine taïwanaise, cantonaise, thaïlandaise ou encore française, ainsi que des spécialités comme le barbecue, les fruits de mer, les pâtes et les sushis. Vingt et un autres restaurants sont également récompensés par un Bib Gourmand à Taichung.
