Four new 2 Star and seven new 1 Star restaurants in the
MICHELIN Guide Nordic Countries 2020
The MICHELIN Guide Nordic Countries 2020 is launched today and confirms the great culinary potential of the Nordics countries. Hosted by the International Director of the Michelin Guides, the ceremony was held for the first time in Norway, in the host city of Trondheim which for years has been witnessing an evolution of its gastronomic scene.
Covering Denmark, Finland, Iceland, Norway and Sweden, this year’s guide features four new 2 Star restaurants: re-launched Alchemist in Copenhagen, Denmark, by Rasmus Munk, which goes straight into the guide with 2 Michelin Stars; Jordnær, in Gentofte, north of Copenhagen, led by highly driven chef Eric Kragh Vildgaard; Aloë in Älvsjö, set just outside Stockholm, Sweden, run by friends Daniel Höglander and Niclas Jönsson; and RE-NAA in Stavanger, Norway, under the leadership of the eponymous Sven Erik Renaa.
In addition to gaining 2 Stars, Jordnær also receives the Michelin Nordic Countries Welcome & Service Award 2020 offered by Ferrari Trento, where the charming Tina Kragh Vildgaard leads the smooth, faultless service and helps to create a truly memorable experience.
Commenting on the new 2 Stars, Gwendal Poullennec said: “While they are all very different, what they share is a real passion for sourcing and seasonality. Alchemist is a 50+ course immersive experience which brings plenty of originality to the table; Jordnær sees well-crafted, delicate dishes; Aloë brings together flavours from around the globe; and Re-Naa focuses on precise, creative cuisine.”
Seven restaurants have been newly awarded 1 Star. Norway is a big winner, with four new distinctions: organic-focused Bare in Bergen; Japanese counter restaurant Omakase by Vladmir Pak in Oslo; elegant Speilsalen, in a luxurious hotel in Trondheim; and Under in Lindesnes, where you dine under the sea with stunning views of the passing sealife.
Also receiving 1 Star are Etoile in Stockholm, Sweden, with its intriguing global cuisine; Inari in Helsinki, Finland which serves largely plant-based dishes; and the re-launched DILL in Reykjavik, Iceland, where chefowner Gunnar Karl Gíslason has returned from New York.
Winner of the Michelin Nordic Countries Chef Mentor Award 2020 offered by Michelin Nordic is Rasmus Kofoed of Geranium in Copenhagen. He is a culinary ambassador for Denmark and provides great encouragement for young chefs through his work in the Bocuse d’Or competition.
Winner of the Michelin Nordic Countries Sustainability Award 2020 offered by Danske Bank is Magnus Ek and his team at Oaxen Krog and Oaxen Slip in Stockholm, Sweden. Their daily work encompasses all elements of sustainability and includes supporting animal welfare, as well as promoting biological diversity and the use of sustainable resources.
Poullennec said: “Today, sustainability is moving increasingly to the forefront of people’s mind, and nowhere more so than in the Nordic Countries, where they have really embraced sustainability as a way of life. Nordic chefs lead the way when it comes to focusing on local ingredients; taking on a zero-waste, nose-to-tail approach; and reducing both food and packaging waste. They are setting the standard for the rest of the world to follow.”

This year, additional information has been introduced to the Michelin website (guide.michelin.com) to highlight Nordic restaurants that are actively following a sustainable ethos. For those taking steps to work in a greener way, there are details on their initiatives. In addition, industry role models, who are at the forefront with their sustainability practices, are highlighted by a new green symbol and their vision outlined via a quotation from the chef.
This year there are four new ‘Bib Gourmand’ restaurants. A ‘Bib’ is Michelin’s distinction for good quality, good value cooking and proves very popular with readers. Two of these Bib Gourmands are in Stockholm, Sweden: stylish modern brasserie Allegrine, and the younger sister of 2 Star Gastrologik, Speceriet. A ‘Bib’ also goes to Venetian-inspired Barabba in Copenhgaen, Denmark, as well as neighbourhood restaurant Nolla in Helsinki, Finland, an advocate of zero-waste.
The Michelin Guide Nordic Countries caters for every type of gastronome, from business traveller to tourist, and recommends the best places to eat and stay across all categories of comfort and price. The guide lists Starred restaurants first, followed by restaurants with a Bib Gourmand, and then restaurants classified with the Plate symbol, which signifies good cooking.

MICHELIN Guide Nordic Countries 2019
The Michelin Guide Nordic Countries2019 is published today, following a Star Revelation launch eventin Aarhus, Denmark, hosted by the International Director of the Michelin Guides, Gwendal Poullennec. Covering Denmark, Finland, Iceland, Norway and Sweden, this year’s guide features three new 2star restaurants: Gastrologik, founded and led by Jacob Holmström and Anton Bjuhr in Stockholm; KOKS, under chef Poul Andrias Ziscain the Faroe Islands; andthe reimaginedNomain Copenhagen, under the leadership of chef René Redzepi. While these three restaurants may appear quite different – the remote ness of KOKS, the understated sophistication of Gastrologik, and the urban farm style of Noma – all three adhere to an ethos of being truly ingredient-led and reflective of the seasons. In addition to receiving the 2 star award, the chef at KOKS, Poul Andrias Zisca, also receives Michelin Nordic Guide Young Chef 2019 award for his creativity, technical skill and passion. There are also four new 1 star restaurantsthis year. Trondheimin Norway is listed in the guidefor the very first time and sees two of its restaurants receive a star: FAGN and Credo. In Copenhagen, Alouette receives its first star and there is also a star for Palacein Helsinki.
Credoalso receives Michelin Nordic Guide Sustainability Award 2019 for its i mpressive eco credentials and social media engagement promoting better food and sustainableland use practices. Speaking about the MICHELIN Guide Nordic Countries 2019, Gwendal Poullennec said: “This is the 6thedition of this titleand once again we have expanded the selection as our inspectors continue to find exciting new restaurants, while also following the progress of already established kitchens. “The Nordic countries offer something truly unique and the diversity and buoyancy of the region’s restaurant scene make it so appealing to food lovers from around the world. Their friendliness, enthusiasm and organisation help make dining here a truly joyful experience. The guide caters for every type of visitor with a passion for gastronomy, from business traveller to tourist, and recommends the best places to eat and stay across all categories of comfort and price. This year’s guide lists starred restaurants first, followed by restaurants with a Bib Gourmand, and then restaurants classified with the Plate symbol, signifying good cooking.
The Bib Gourmand is the Michelin symbolfor good quality, good value cooking. This distinction always proves very popular with readers, both locally and worldwide as it rewards well-made and affordable cuisine. This year there are three new Bib Gourmands, two of which are in Denmark: Selmain Copenhagen and Momentin Rønde; with one in Iceland: Skál!in Reykjavik. This brings thetotal number of restaurants with a Bib Gourmand in the 2019 guide to 34. In addition to Trondheim in Norway appearing in the Guide for the first time, Aalborg and Rønde in Denmark, Grindavik in Iceland, and Kosta in Sweden allmake their debuts in 2019. Overall,30 restaurants have been added to this edition, giving readers of the MICHELIN Guide even greater choice when dining out.

A l’occasion de la cérémonie des Etoiles qui se déroule à Aarhus au Danemark, Michelin a le plaisir de dévoiler la sélection du guide MICHELIN Nordic Countries 2019. Cette sélection, qui couvre le Danemark, la Finlande, l’Islande, la Norvège et la Suède comptetrois nouveaux restaurants 2 étoiles: Gastrologik à Stockholm, KOKS dans les Iles Féroé et Nomaà Copenhague. Bien que ces trois restaurants puissent sembler assez différents -l’éloignement géographiquede KOKS, la sophistication subtile de Gastrologiket l’esprit ferme urbaine de Noma-tous adhèrent à une philosophie commune qui est de mettre le produit au cœur de l’assiette, dans un respectde la saisonnalité. Toujours chez KOKS, le chef Poul Andrias Zisca, reçoit égalementle Prix Michelin Nordic Countries 2019 du Jeune Chef pour sa créativité, sa technicité et la passion qu’il transmet dans sa cuisine. Quatre nouveaux restaurantsse voient attribuer 1 étoile cette année. Deux d’entre eux se situent dans la ville de Trondheim en Norvège, qui est répertoriée pour la toute première fois dans le guide: FAGN et Credo. Restaurant Frantzén in Sweden receives Three Stars in the MICHELIN Guide Nordic countries 2018
With a total of 64 Starred restaurants this year, the MICHELIN Star Family has now increased with 1 new Three-Star restaurant, 2 new Two-Star restaurants and 7 new One-Star restaurants.
Michelin is pleased to unveil the selection of The MICHELIN guide Nordic Countries 2018, launched at a special event at Copenhagen City Hall.
This year’s guide features one new Three-Star restaurant: Frantzén in Stockholm. Michael Ellis, International Director of the MICHELIN guides, comments: “Bjorn Frantzén has created a unique vision of Nordic cuisine, combining sublime ingredients with astounding culinary techniques. Bjorn Frantzén’s gastronomic expression is truly worth the journey, and is a gustatory experience like no other”.
The MICHELIN guide Nordic Countries 2018 also includes two new Two-Star restaurants: Daniel Berlin in Skåne Tranås, Sweden, where Chef Daniel Berlin makes wonderful use of local ingredients, with the emphasis on balance, purity and precision, and Kadeau in Copenhagen, Denmark.
In this restaurant, the passion of the team, which is like a family, comes through in the cooking which is defined by finesse and intricacy.
This year’s guide also sees an exciting geographical extension of new One Star restaurants. Denmark has two: Me|Mu in Vejle and Jordnær in Gentofte. Sweden boasts three new One-Stars: SAV in Malmo, and Aloë and Agrikultur in Stockholm. In Finland, Grön
is a great addition to Helsinki, and in Norway Galt adds to the impressive array of restaurants in Oslo.

This year, seven new addresses are distinguished, including three in Stockholm: Kagges, Shibumi and Bar Agrikultur and one in Gothenburg: Project. In Helsinki Jord receives a Bib Gourmand, as do PMY and Musling Bistro in Copenhagen. This brings the total number of rest aurants with Bib Gourmand in the MICHELIN guide to 37.

Le guide MICHELIN Nordic Countries 2018 inclut également deux nouveaux établissements deux étoiles : Daniel Berlin, à Skåne Tranås, en Suède, où le chef Daniel BERLIN utilise avec brio les produits locaux en mettant l’accent sur l’équilibre, la pureté et la précision, et Kadeau, à Copenhague, au Danemark. La brigade de Kadeau, qui fonctionne comme une famille, exprime sa passion à travers une cuisine toute en finesse et en subtilité.
Cette année, les nouveaux restaurants une étoile se multiplient en Scandinavie. Le Danemark en compte deux : Me|Mu à Vejle et Jordnær à Gentofte, et la Suède, trois: SAV à Malmö, Aloë et Agrikultur à Stockholm. Un restaurant se voit également distingu é d’une étoile en Finlande : Grön, à Helsinki. En Norvège, Galt situé à Oslo est également récompensé d’une étoile.
Le guide MICHELIN Nordic Countries 2018 s’adresse à tous les visiteurs, des voyageurs d’affaires jusqu’aux touristes, à qui il recommande les meilleurs établissements dans toutes les gammes de confort et de prix.
Le Bib Gourmand met en lumière les restaurants proposant une cuisine de qualité à un prix attractif. En 2018, sept nouvelles adresses sont distinguées par un Bib Gourmand, dont trois à Stockholm (Kagges, Shibumi et Bar Agrikultur) et une à Göteborg (Project). À Helsinki, Jord reçoit également un Bib Gourmand, tout comme PMY et Musling Bistro à Copenhague, ce qui porte le total des Bib Gourmands à 37 dans le guide MICHELIN Nordic Countries 2018.

For the first time, Michelin has awarded One Star to a restaurant in Reykjavik and the
Faroe Islands
Michelin today unveiled the new selection of the MICHELIN guide Nordic Countries 2017, which lists a total of 274 restaurants located in Denmark, Sweden, Norway, Finland and, for the first time, Iceland and the Faroe Islands.
“We are particularly pleased to develop our selection into the outer regions of the Nordic Countries and to continue our expansion with the inclusion of Iceland and the Faroe Islands” commented Michael Ellis, International Director of the MICHELIN guides. “Our inspectors were pleased to discover the quality of Reykjavik’s culinary scene and to award Dill the very first Star for Island. They were also impressed with the chef’s use of indigenous ingredients and traditional techniques like smoking and salting at KOKS in the newly listed Faroe Islands, which also reveives a MICHELIN Star”
This year’s guide also features two new Two Star restaurants: Vollmers in Malmö, Sweden and Henne Kirkeby Kro in Henne, Denmark. Rebecca Burr, editor of the MICHELIN guide Nordic Countries 2017 said, “We are thrilled to award two new Two Stars in the 2017 MICHELIN guide. The eponymous Mats Vollmer serves superbly innovative, modern food at his charming Malmö restaurant, while at destination restaurant, Henne Kirkeby Kro, Paul Cunningham cooks sublimely flavoured, classically based dishes which celebrate the surrounding farmland.”
As well as its new Two Star, this year Denmark boasts five new One Star restaurants: 108 in Copenhagen;
Domestic in Aarhus; Ti Trin Ned in Fredericia, on the Eastern part of the Jutland Peninsula, and Slotskøkkenet at Dragsholm Slot in the market town of Hørve.
In Sweden, Imouto in Stockholm and Sture in Malmö pick up One Star, while in Norway, new One Star restaurant Sabi Omakase joins existing Star RE-NAA to bring Stavanger’s total to two Starred restaurants.
Michelin also unveiled the list of restaurants that have received a Bib Gourmand, an award given by the inspectors to establishments offering good quality, good value cooking. This award, which is experiencing growing success worldwide, is popular with restaurateurs and the general public because it rewards wellmade, local, and inexpensive cuisine. This year it has been newly awarded to Anarki in Copenhagen, Matur og Drykkur in Reykjavik, and Cirkus at More Bistro and Namu in Malmö. This brings the total number of estaurants awarded a Bib Gourmand for 2017 to 33.
The MICHELIN guide Nordic Countries 2017 will be available in all sales outlets from 24 February 2017.

Un restaurant de Reykjavik et un restaurant des îles Féroé obtiennent pour la premièrfois une étoile au guide MICHELIN
Michelin dévoile aujourd’hui la nouvelle sélection du guide MICHELIN Nordic Countries 2017, qui compte 274 restaurants situés au Danemark, en Suède, en Norvège, en Finlande et, pour la première fois, en Islande et dans les îles Féroé.
« Nous sommes particulièrement heureux d’étoffer notre sélection aux confins des pays nordiques et d’élargir encore le territoire que nous couvrons en y incluant l’Islande et les îles Féroé », commente Michael ELLIS, directeur international des guides MICHELIN. « Nos inspecteurs ont pris plaisir à découvrir la qualité de la scène culinaire de Reykjavik et à décerner à Dill la toute première étoile en Islande. Dans les îles Féroé, le restaurant KOKS les a impressionnés par son utilisation des produits locaux et des techniques traditionnelles, telles que le fumage et le salage, ce qui lui vaut d’être également distingué d’une étoile MICHELIN. »
La sélection 2017 comporte deux nouveaux établissements deux étoiles : Vollmers à Malmö, en Suède, et Henne Kirkeby Kro à Henne, au Danemark. « Nous sommes enchantés d’attribuer deux étoiles à ces deux restaurants qui font leur entrée dans le guide MICHELIN », déclare Rebecca Burr, rédactrice en chef du guide MICHELIN Nordic countries 2017. « Mats Vollmer sert une cuisine moderne et magnifiquement innovante dans son charmant restaurant éponyme de Malmö. Chez Henne Kirkeby Kro, Paul Cunningham propose des plats classiques sublimés, qui sont un hymne à l’agriculture locale et attirent la clientèle bien au-delà de son quartier. »
Outre ses nouveaux établissements deux étoiles, le Danemark gagne cinq nouveaux restaurants une étoile : 108 à Copenhague, Domestic à Aarhus, Ti Trin Ned à Fredericia, dans la partie est de la péninsule du Jutland, et Slotskøkkenet à Dragsholm Slot dans la ville de Hørve.
En Suède, Imouto à Stockholm et Sture à Malmö obtiennent une étoile, tandis qu’en Norvège, Sabi Omakase gagne sa première étoile et rejoint RE-NAA au rang des restaurants étoilés de Stavanger.
Michelin révèle également la liste des établissements distingués d’un Bib Gourmand, qui récompense les tables proposant un bon rapport qualité-prix. Cette distinction, dont le succès va croissant dans le monde entier, est appréciée tant des restaurateurs et du grand public puisqu’elle récompense la cuisine locale bien faite et bon marché. En 2017, un nouveau Bib Gourmand a été attribué à Anarki (Copenhague), Matur og Drykkur (Reykjavik) et Cirkus at More Bistro et Namu (Malmö), ce qui porte le total des Bib Gourmands à 33 dans les pays nordiques.
Le guide MICHELIN Nordic Countries 2017 sera disponible dans tous les points de vente à partir du 24 février 2017.
