MICHELIN Guide Germany 2020: a three star establishment in
Berlin for the first time
With 37 new one, two or three-star restaurants and 23 new Bib Gourmand establishments the MICHELIN Guide Germany 2020 once again demonstrates its great culinary diversity.
The MICHELIN Guide was developed with a constant desire to promote regions and respect local know-how while highlighting the work of passionate men and women. Today, the Guide continues its mission and reveals to the world the first stage of a global project: to distinguish, through a single emblem, those chefs committed to preserving the environment.
Offered to the Bib Gourmands, Plates and Stars, this first selection of chefs unite around the same subject, ideas and methods that contribute to our awareness. For years in Germany, many chefs have developed their cuisine to nature’s rhythm, where the desire to use theircreativity to transform perfectly ripened products, grown close to their brigades, is just as important as the care taken to reduce the overall environmental footprint of their establishment.
The sustainable initiatives of the first chefs identified will be detailed and highlighted on the various platforms of the MICHELIN Guide throughout the year through the creation of various content.
The Berlin restaurant Rutz, under the direction of chef Marco MÜLLER, is awarded its third star this year. “The cuisine of Marco Müller and his team has developed fabulously over a short period of time. The dishes are full of finesse, with a strong identity, but are also cleverly balanced in terms of flavour. They stand out clearly because of the chef’s ongoing dialogue with nature,” says Gwendal Poullennec, international director of MICHELIN Guides.
Germany now has 10 restaurants distinguished at the highest level by the MICHELIN Guide for their exceptional cuisine. The announcement of the sudden closure of Germany’s oldest three-star restaurant, the Schwarzwaldstube in Baiersbronn, saddened the entire gourmet community. Gwendal Poullennec says: “The closure of the Schwarzwaldstube following a fire deeply moved our inspectors. Like many German and foreign gourmets, they are all eager to sit down again in this iconic restaurant which is a symbol of German gastronomy. “The legendary restaurant, which had been awarded the highest MICHELIN guide award since 1993, was completely destroyed in early 2020, along with the Köhlerstube, Bauernstube and the Traube Tonbach Hotel headquarters. The hotel activities of the “Traube” continue and the rebuilding of the restaurants will only be greater.
7 new restaurants are entering the 2020 edition with a second star, demonstrating the excellence of the German culinary scene. The CODA Dessert Dining restaurant in Berlin, run by chef René FRANK, delivers innovative and creative cuisine based on modern baking techniques. Two new addresses in Bavaria also join the two-star circle: Les Deux in Munich and Oberndorfer’s Eisvogel in Neunburg vorm Wald. The Olivo in Stuttgart, the Gustav in Frankfurt am Main, the Bianc in Hamburg and the Jante in Hanover delight their guests with high-quality and tasteful cuisine.
In total, the inspectors of the 2020 edition awarded two stars to 43 restaurants, a record in Germany.
The 29 new addresses that have been awarded a star confirm the strong position of German’s gastronomy in Europe. This development continues to be driven by talented chefs with innovative ideas. From Munich (Mural and Sparkling Bistro), via Münster (Cœur d’artichaut and Ferment) to Berlin (Cordo and Prism), Germany delights with an attractive, high-quality, multicultural culinary scene.
In addition to a broad spectrum of culinary styles, from classic French to creative modern, from Mediterranean to regional and vegan, Germany’s top restaurants are distinguished by a wide diversity of gastronomic concepts. The trend towards “Casual Fine Dining”, offering high-level culinary enjoyment in a casual, relaxed atmosphere, continues unabated. The MICHELIN Guide Germany 2020 again features many top restaurants that follow this philosophy, which is particularly popular with younger diners.
This year also sees a lot of movement in the “Bib Gourmand” category. The MICHELIN Guide Germany 2020 includes 23 new restaurants with this distinction, five of which are in Berlin.
This symbol points to restaurants that offer good value and well-priced cuisine: a 3-course menu for 37 euros. For the 2020 edition of the MICHELIN Guide Germany, the inspectors have awarded a total of 372 establishments with the Bib Gourmand
The MICHELIN guide “Bib Gourmand Deutschland 2020” will be published on March 3, 2020 and will be available in bookshops from March 6, 2020 for €17.90 (€18.40 in Austria).
The 57th edition of MICHELIN Guide Germany features 524 hotels and 1,579 restaurants, including:
308 starred restaurants including:
10 three-star restaurants, one of which is new;
43 two-star restaurants, seven of which are new;
255 one-star restaurants, 29 of which are new;
372 “Bib Gourmand” restaurants, 23 of which are new.
The selection is available free of charge on the new MICHELIN Guide website guidemichelin.com. The print version of the MICHELIN Guide Germany 2020 will be available in bookstores from March 6 for €29.95 (€30.80 in Austria, 39 francs in Switzerland).

Guide MICHELIN Allemagne 2020: pour la première fois, un établissement trois étoiles à Berlin
Avec 37 nouveaux restaurants distingués d’une, de deux ou de trois étoiles et 23 nouveaux établissements Bib Gourmand, le Guide MICHELIN Allemagne 2020 prouve une fois de plus sa grande diversité culinaire.
Le Guide MICHELIN s’est développé dans un désir constant de promouvoir les régions et de respecter les savoir faire locaux tout en mettant en lumière le travail d’hommes et de femmes passionnés. Aujourd’hui, le Guide poursuit sa mission et révèle au monde entier la première étape d’un projet d’envergure mondial : celui de distinguer autour d’un emblème unique des chefs engagés dans la préservation de l’environnement.
Proposé aux Bib Gourmand, Assiettes et aux Étoiles, cette première sélection de chefs fédère autour d’un même sujet, des idées et des méthodes qui participent à la sensibilisation de chacun. Depuis des années en Allemagne, de nombreux chefs construisent leur cuisine au rythme de la nature où l’envie de transformer par leur créativité des produits mûrs à point, qui ont grandi à proximité de leurs brigades compte autant que le soin apporté à la réduction de l’empreinte environnementale globale de leur établissement.
Les initiatives durables des premiers chefs identifiés seront détaillées et mises en valeur sur les différentes plateformes du guide MICHELIN tout au long de l’année par la création de différents contenus.
Le restaurant berlinois Rutz, sous la direction du chef Marco MÜLLER, se voit distingué cette année de sa troisième étoile. « La cuisine de Marco Müller et son équipe a connu une
évolution fabuleuse en peu de temps. Les plats sont emprunts de finesse, dotés d’une forte identité bien que savamment équilibrés sur le plan des saveurs. Ils se démarquent nettement par le dialogue continu que le chef entretient avec la nature », déclare Gwendal Poullennec, directeur international des Guides MICHELIN.
L’Allemagne compte aujourd’hui dix établissements distingués au plus haut niveau par le Guide MICHELIN pour leur cuisine d’exception. L’annonce de la fermeture brutale du plus vieux restaurant trois étoiles d’Allemagne, le Schwarzwaldstube à Baiersbronn a attristé toute la communauté des gourmets. Gwendal Poullennec précise: « La fermeture du Schwarzwaldstube à la suite d’un incendie a profondément ému nos inspecteurs. Touchés au cœur comme de nombreux gastronomes allemands et étrangers, tous ont hâte de s’attabler à nouveau dans ce restaurant iconique qui porte haut les couleurs de la gastronomie allemande. » Distingué au plus haut niveau par le guide MICHELIN depuis 1993, cet établissement légendaire a été complètement détruit au début de l’année 2020,
ainsi que le « Köhlerstube », le « Bauernstube » et le siège de l’hôtel « Traube Tonbach ».
Les activités hôtelières du « Traube » se poursuivent et la reconstruction des restaurants ne sera que plus grande.
7 nouveaux restaurants se voient entrer dans l’édition 2020 avec une deuxième étoile. Ils prouvent l’excellence de la scène culinaire allemande. Le restaurant CODA Dessert Dining à Berlin, dirigé par le chef René FRANK livre une cuisine innovante et créative, basée sur les techniques modernes de la pâtisserie. Deux nouvelles adresses en Bavière rejoignent également le cercle des deux étoiles : Les Deux à Munich et Oberndorfer’s Eisvogel à Neunburg vorm Wald. L’Olivo à Stuttgart, le Gustav à Francfort-sur-le-Main, le Bianc à Hambourg et le Jante à Hanovre délectent leurs convives d’une cuisine de haute qualité et de goût.

Cette évolution se poursuit sous l’effet de chefs talentueux aux idées innovantes. De Munich (Mural et Sparkling Bistro), en passant par Münster (Cœur d’artichaut et Ferment) à Berlin (Cordo et Prism), l’Allemagne se délecte d’une scène culinaire multiculturelle attrayante et de haute qualité.
Outre un large éventail de styles culinaires allant du français classique au moderne créatif, du méditerranéen au régional et au végétalien, les meilleurs restaurants allemands se distinguent par une large diversité de concepts gastronomiques. La tendance au “Casual Fine Dining”, qui offre un plaisir culinaire de haut niveau dans une atmosphère décontractée, se poursuit. Le guide MICHELIN Allemagne 2020 présente à nouveau de nombreux restaurants de haut niveau qui suivent cette philosophie, particulièrement appréciée des jeunes.
Le paysage des « Bib Gourmands » est également bouleversé. Le Guide MICHELIN Allemagne 2020 présente 23 nouveaux restaurants, dont cinq à Berlin. Ce symbole indique les restaurants proposant une bonne cuisine d’un excellent rapport qualité-prix, en l’occurrence ceux ayant un menu en trois plats à 37 euros. Five new 2 star restaurants and 37 new 1 star restaurants in the MICHELIN Guide Germany 2019
The selection of the MICHELIN Guide Germany 2019 was announced today at the Star Revelation event in Berlin, hosted by Gwendal Poullennec, the International Director of the MICHELIN Guides. The restaurant Purs, in Andernach, under head chef Christian Eckhardt has succeeded inbringing about therare achievement of entering the guide with 2 Michelin stars–the restaurant only opened in February 2018. Three of the newcomers to the Michelin 2 star family are in Bavaria, and these are: Luce d’Oro, which is part of Elmau Castle in Krün; the restaurant Sosein in Heroldsberg; as well as the Alexander Herrmann in Wirsberg, run by chef Tobias Bätz. The number of one star restaurants rises to 261, with 37 new additions, and this adds up to an all-time highof 309 starred restaurants in Germany. This success is due toboth the existing guard of well-established and experienced chefs, as well as a new generation of young and talented chefs with their innovative and fresh ideas.’For years Berlin has been known for its innovative culinary scene and thistrend continues. The German capitalis home to four newly starred restaurants with extraordinary concepts: The name of CODA Dessert Dining already gives a hint that this restaurant’s cuisine is predominantly based on state-of-the-art patisserie techniques; Ernst focusses on the freshest ingredients grown in the region; SAVU, with itsfusion of Nordic, Spanish, and Italian cuisine; and finally Kin Dee, complementing its fine Thai dishes with exceptionallocal produce. Futher North, Hamburg is also honing its reputation as a destination for passionate diners. The city is home to three new restaurants that have all gained their first Michelin starand have entered the guide directly at this level: Lakeside, located within the fabulous new hotel,The Fontenay; bianc, located in the newly built Hafen City quarter, not far from the spectacular Elb philharmonie building; and 100/200 which operates without a menu card,and where the stove stands in the centre of therestaurant. After Frankfurt and Berlin, Munich is the third German city with a starred vegetarian restaurant, as Michelin’s team of inspectors have awarded 1 star to the restaurant Tian. In Vienna, Austria, the restaurant of the same name, and with the same vegetarian concept, had already gained 1 star in 2014. The city of Nuremberg is becoming more and more of a culinary hotspot. The beautiful city boasts three new 1star restaurants: Koch und Kellner, Der Schwarze Adlerand Waidwerk. Diners in the city can now choosebetween five restaurants distinguished with 1 star and one 2 star restaurant: Essigbrätlein. Andernach, situated in the picturesque mid-Rhine valley, has become another interesting destination. With the new 2 star restaurant Pursand three existing 1 star establishments, the town of only 30,000 inhabitants is now home to four restaurants with stars. Bib Gourmand restaurants are always popular with readers of the guide, and the in MICHELIN Guide Germany 2019, the inspectors have distinguished 39 new restaurants with a Bib Gourmand. Symbolized by the Michelin Man licking his lips, the Bib Gourmand guides the way to establishments that prepare simple yet skillful dishes with good quality and good value. In Germany, a 3 course meal (starter, main, dessert) must be available for a maximum of €37. The 2019 edition recommends a totalof 424 Bib Gourmand establishments, and in addition, theseare exclusively listed in the Guide Bib Gourmand Deutschland. Ouvert depuis seulement le mois de février 2018, le restaurant Purs du chef Christian Eckhardt, situé à Andernach, réussit le rare exploit d’entrer dans le guide avec deux étoiles.Trois des nouveaux restaurants deux étoiles sont quant à eux bavarois: Luce d’Oro, qui fait partie du château d’Elmau à Krün; le restaurant Sosein à Heroldsberg ainsi que le restaurant Alexander Herrmann, du chef Tobias Bätz, à Wirsberg.
